# Directions:
01 - In a medium mixing bowl, blend the softened cream cheese, mayonnaise, Cajun seasoning, and Dijon mustard until the mixture is completely smooth and uniform.
02 - Arrange the flour tortillas on a clean cutting board. Spread an even layer of the cream cheese mixture over each tortilla, leaving a 1/2-inch margin around the edges.
03 - Top each tortilla with baby spinach leaves, roast beef slices, diced red bell pepper, and sliced green onions distributed evenly across the surface.
04 - Starting from one side, gently but tightly roll up each tortilla to enclose the fillings. Place each roll seam-side down to maintain shape.
05 - Wrap each roll securely in plastic wrap. Refrigerate rolls for a minimum of 30 minutes to enhance slice integrity and texture. This step is optional but recommended.
06 - Remove plastic wrap and use a sharp knife to slice each roll into 6 pinwheels. Arrange pinwheels on a serving platter and sprinkle with chopped fresh parsley if desired.
