# Directions:
01 - In a medium bowl, gently mix softened goat cheese, chopped dried cranberries, thyme (if using), honey, and black pepper until just incorporated.
02 - Transfer the mixture onto plastic wrap, form into a log by wrapping tightly and smoothing the surface, then chill for 15 to 30 minutes to firm.
03 - Gently toss fresh strawberries, blueberries, raspberries, and mint leaves (if using) in a bowl.
04 - Unwrap the chilled goat cheese log, place on a serving platter, and arrange the fresh berries attractively around it.
