Creamy Mushroom Grilled Cheese (Print View)

Golden, crispy bread layered with creamy mushrooms and melted cheese for a comforting meal.

# Components:

→ Mushrooms

01 - 7 oz cremini or button mushrooms, cleaned and sliced
02 - 1 tablespoon unsalted butter
03 - 1 small garlic clove, minced
04 - 1 tablespoon fresh thyme leaves or 1/2 teaspoon dried thyme
05 - Salt and black pepper, to taste
06 - 2 tablespoons heavy cream

→ Sandwich

07 - 4 slices sourdough or country bread
08 - 4 slices Swiss or Gruyère cheese (3 oz)
09 - 2 tablespoons unsalted butter, softened

# Directions:

01 - Heat 1 tablespoon butter in a skillet over medium heat. Add the sliced mushrooms and cook, stirring frequently, until golden brown and moisture evaporates, about 6-8 minutes.
02 - Stir in minced garlic and thyme; cook for 1 minute until fragrant. Season with salt and pepper.
03 - Reduce heat to low. Add heavy cream and cook for 1-2 minutes until mushrooms are creamy but not runny. Remove from heat and set aside.
04 - Place a slice of cheese on two bread slices, evenly divide the creamy mushroom mixture atop, add another cheese slice, and cover with remaining bread slices.
05 - Spread softened butter on the outside of each sandwich. Heat a clean skillet over medium-low heat. Cook sandwiches 3-4 minutes per side, pressing gently, until bread is golden and cheese melts.
06 - Remove from heat, slice sandwiches in half, and serve warm.

# Expert Advice:

01 -
  • It tastes like you spent an hour in the kitchen when it takes barely twenty minutes from start to finish.
  • The creamy mushrooms are rich enough to feel indulgent without being heavy, and they won't slide out when you bite through the golden bread.
  • You probably have most of these ingredients already, which means no extra shopping trip needed.
02 -
  • If your mushrooms release a lot of liquid, don't drain it away immediately, let them cook longer so that moisture evaporates instead; otherwise you'll end up with a wet, soggy sandwich.
  • Use medium-low heat when toasting the sandwich or the outside will burn before the cheese inside has time to melt properly.
03 -
  • Press down gently on the sandwich as it toasts instead of constantly flipping it, which helps the cheese melt evenly and the bread develop that perfect golden crust.
  • If you're making these for more than two people, have all your components ready before you start toasting, because once they come off the pan they're best served immediately while everything is still hot.
