Medjool dates filled with goat cheese and wrapped in crispy bacon for a flavorful sweet-salty bite.

01 - 16 large Medjool dates, pitted
02 - 4 oz fresh goat cheese (chèvre)
03 - 8 slices thin-cut bacon, halved crosswise

# Directions:

01 - Preheat oven to 400°F and line a baking sheet with parchment paper.
02 - Make a lengthwise slit in each date with a small knife and remove pits if not already pitted.
03 - Fill each date with 1 teaspoon of goat cheese, gently pressing to close around the filling.
04 - Wrap each stuffed date with half a slice of bacon, securing ends underneath or with toothpicks as needed.
05 - Place wrapped dates seam-side down on the prepared baking sheet.
06 - Bake for 18 to 22 minutes, turning once midway, until bacon is crisp and browned.
07 - Allow to cool for 5 minutes before serving.
