01 - 4 cups filtered water
02 - 1/4 cup organic cane sugar
03 - 2 tablespoons water kefir grains or 2 tablespoons ginger bug
04 - 1/4 cup fresh lemon juice

05 - 1/2 cup fresh orange juice
06 - 1/2 cup fresh lime juice
07 - 8 fresh mint leaves
08 - 4 thin orange slices, for garnish
09 - Ice cubes, to serve
# Directions:
01 - Dissolve organic cane sugar in filtered water in a clean glass jar. Incorporate water kefir grains or ginger bug and fresh lemon juice, stirring gently with a non-metallic spoon.
02 - Cover the jar with a breathable cloth or coffee filter secured by a rubber band. Allow the mixture to ferment at room temperature (68–77°F) for 24–48 hours until slightly effervescent and tangy.
03 - Strain out water kefir grains or ginger bug using a fine mesh strainer. Discard or reserve cultures for future batches.
04 - Combine the fermented soda base in a pitcher with fresh orange juice, lime juice, and mint leaves. Stir gently.
05 - Fill glasses with ice cubes. Pour the mocktail over the ice and garnish with an orange slice and additional mint if preferred. Serve immediately to enjoy optimal carbonation.
