01 - 4 large spinach or whole wheat tortillas
02 - 8 oz cream cheese, softened
03 - 2 tbsp Greek yogurt or sour cream
04 - 1 tsp garlic powder
05 - 1/2 tsp salt
06 - Freshly ground black pepper, to taste

→ Vegetables

07 - 1/2 red bell pepper, finely diced
08 - 1/2 yellow bell pepper, finely diced
09 - 1/2 orange bell pepper, finely diced
10 - 1 small carrot, shredded
11 - 1/2 cucumber, seeded and finely diced
12 - 1/2 cup purple cabbage, finely shredded
13 - 2 tbsp chopped fresh chives or green onions

14 - Fresh parsley or cilantro, finely chopped

# Directions:

01 - Combine cream cheese, Greek yogurt, garlic powder, salt, and black pepper in a medium bowl. Mix until smooth and spreadable.
02 - Lay one tortilla flat and evenly spread one-quarter of the cream cheese mixture, leaving a 1/2-inch border around the edges.
03 - Distribute an even layer of diced bell peppers, shredded carrot, diced cucumber, shredded purple cabbage, and chopped chives over the spread, arranging colors to resemble Christmas lights.
04 - Press vegetables gently into the spread and tightly roll the tortilla into a log shape.
05 - Repeat the spreading, layering, and rolling process with the remaining tortillas and fillings.
06 - Wrap each rolled tortilla in plastic wrap and refrigerate for at least 30 minutes to firm up for easier slicing.
07 - Unwrap and slice each roll into six pinwheels. Arrange on a platter and garnish with chopped fresh parsley or cilantro if desired.
