# Directions:
01 - Heat olive oil in a large pot over medium-high heat. Add sausage slices and sauté for 2 minutes until lightly browned.
02 - Add onion, carrots, and celery. Cook for 3 minutes, stirring occasionally, until vegetables begin to soften.
03 - Stir in garlic, dried thyme, dried oregano, and crushed red pepper flakes; cook for 30 seconds until fragrant.
04 - Add white beans and broth. Bring to a gentle boil, then reduce heat and simmer uncovered for 5 minutes.
05 - Stir in baby spinach until wilted, if using. Season with salt and freshly ground black pepper to taste.
